This salad is always a crowd pleaser- even those who aren’t huge veggie eaters (I think the cheese helps) 🙂 When my husband and I lived in Costa Rica, we were constantly looking for fresh new ways to prepare the same vegetables.

4-5 Roma tomatoes (you can use any tomatoes; I use Romas because I think they have the most flavor)
1 Cucumber
1-2 Peppers-any color (amount depends on your taste)
1 Medium-ripe avocado (yields slight to gentle pressure, but does not indent when touched)
1 1/2 cups queso fresco (can be purchased in most any grocery store)
1-2 limes (depending on your taste)
1/2 bushel of cilantro


Chop tomatoes and cucumbers into squares, making sure to cut out the tomato’s seeds and “goo” (endocarp). See photo below.


Next, slice a ripe- but not too ripe- avocado in half, peel off the skin and cut it into cubes as well.


Next, cube the queso fresco.


Next, cut your pepper and any other vegetables you’d like to add.


Next, squeeze in the fresh lime juice. I prefer to cut a lime into eighths and squeeze each one individually. You can also use a lime/lemon squeezer.


Then, mince your cilantro.


Add the cilantro to your salad and gently stir everything together until each piece is covered in lime juice and chopped cilantro.
